A handful of plots, chosen one by one, picked by hand at the exact moment of early veraison — when yield is at its lowest and aromatic concentration at its highest. Sensory Profile

Intense green fruitiness. Unripe tomato, cardoon, olive leaf and a very long balsamic trail; bitterness and pungency firmly drawn, the structure clean.

Extra Virgin Olive Oil

Our standard, no compromises

Olives picked at veraison and milled within twelve hours, while the flesh is still cool and alive. Free acidity stops well below the legal limit and the polyphenols stay where they belong: in the oil. It is the highest grade the EU standard provides for, and the benchmark we measure everything else against.

The dependable base of any kitchen

Born from a fully ripe harvest, when the fruit has given its highest yield. Mechanical extraction only, at controlled temperature: no solvents, no refining, no correction. This is the everyday oil — balanced, soft, built to take heat without losing its identity.
